I’m always on the look out for little quick and different bites that my children will eat. So, when I had some leftover pimento cheese that wasn’t getting eaten for lunches this week, I decided I needed to recycle it in a kid-friendly way.
This is probably the simplest recipe/technique in the world. 🙂
All I needed was:
- Two boxes of mini phyllo shells
- 1/2 container premium pimento cheese (you want the kind that actually has shredded cheese in it so the cheese will melt)
Pull out a baking sheet and heat the oven to 350 degrees. Place one teaspoon of pimento cheese in each little shell and bake for ten minutes.
I served these with a stew as a side instead of bread and it was well-received by all and delicious. I’m also currently on weight watchers, and these little beauties are one smart point each. I made myself stop at six of them!
